{"id":830,"date":"2023-05-27T21:50:22","date_gmt":"2023-05-27T19:50:22","guid":{"rendered":"https:\/\/www.pizzeriaatarantella.it\/?p=830"},"modified":"2023-05-27T21:50:24","modified_gmt":"2023-05-27T19:50:24","slug":"origini-e-storia-della-vera-pizza-napoletana","status":"publish","type":"post","link":"https:\/\/www.pizzeriaatarantella.it\/en\/origins-and-history-of-the-true-neapolitan-pizza\/","title":{"rendered":"Origins and History of the True Neapolitan Pizza"},"content":{"rendered":"<p data-start=\"96\" data-end=\"258\">The origins of authentic Neapolitan pizza date back to <strong data-start=\"151\" data-end=\"159\">1889<\/strong>, when Italy\u2019s queen, <strong data-start=\"181\" data-end=\"204\">Margherita of Savoy<\/strong>, and her husband, <strong data-start=\"223\" data-end=\"241\">King Umberto I<\/strong>, visited Naples.<\/p>\n<p data-start=\"260\" data-end=\"353\">Come and try the real pizza of Naples at the Neapolitan pizzeria in Milan, <strong data-start=\"335\" data-end=\"352\">\u2019A Tarantella<\/strong>!<\/p>\n<p data-start=\"355\" data-end=\"457\">During their stay, Queen Margherita ordered a pizza made with <strong data-start=\"417\" data-end=\"456\">tomato sauce, mozzarella, and basil<\/strong>.<\/p>\n<p data-start=\"459\" data-end=\"550\">During her trip, she learned about a well-known regional culinary specialty called \u201cpizza.\u201d<\/p>\n<p data-start=\"552\" data-end=\"698\">She decided to try it, so she contacted <strong data-start=\"592\" data-end=\"613\">Raffaele Esposito<\/strong>, one of the most famous pizzaioli in Naples, and asked him to prepare a pie for her.<\/p>\n<p data-start=\"700\" data-end=\"846\">Raffaele Esposito was widely considered one of the best pizzaioli of his time and owned a pizzeria known as <strong data-start=\"808\" data-end=\"846\">\u201cPizzeria di Pietro e Basta Cos\u00ec.\u201d<\/strong><\/p>\n<p data-start=\"848\" data-end=\"994\">In response to the queen\u2019s invitation, he went to the royal residence in <strong data-start=\"921\" data-end=\"936\">Capodimonte<\/strong> to personally cook pizza for both the king and the queen.<\/p>\n<p data-start=\"996\" data-end=\"1167\">To show his respect for the queen, Esposito chose to make <strong data-start=\"1054\" data-end=\"1079\">three distinct pizzas<\/strong>, using traditional Italian ingredients that also echoed the colors of the Italian flag.<\/p>\n<p data-start=\"1169\" data-end=\"1315\">The <strong data-start=\"1173\" data-end=\"1180\">red<\/strong> of the tomato, the <strong data-start=\"1200\" data-end=\"1209\">white<\/strong> of the mozzarella, and the <strong data-start=\"1237\" data-end=\"1246\">green<\/strong> of the basil each represented a different shade of the Italian flag.<\/p>\n<p data-start=\"1317\" data-end=\"1543\">As a result, he created three different types of pizza: one with tomato, mozzarella, and basil, which he called <strong data-start=\"1429\" data-end=\"1451\">\u201cPizza Margherita\u201d<\/strong>; one with mozzarella, tomato, anchovies, and oregano, which he called <strong data-start=\"1522\" data-end=\"1543\">\u201cPizza Marinara.\u201d<\/strong><\/p>\n<p data-start=\"1545\" data-end=\"1647\">Finally, one with mozzarella, tomato, basil, sausage, and peppers, which he called <strong data-start=\"1628\" data-end=\"1647\">\u201cPizza Napoli.\u201d<\/strong><\/p>\n<p data-start=\"1649\" data-end=\"1700\">All of these pizzas are named after Italian cities.<\/p>\n<p data-start=\"1702\" data-end=\"1801\">\u201cPizza Margherita\u201d was a dish Queen Margherita loved so much that she often called it her favorite.<\/p>\n<p data-start=\"1803\" data-end=\"1938\">Because of this event, Neapolitan pizza became famous throughout the United States and helped spread its reputation to other countries.<\/p>\n<p data-start=\"1940\" data-end=\"2154\">Since then, authentic Neapolitan pizza has been defined by the use of high-quality ingredients, such as <strong data-start=\"2044\" data-end=\"2154\">\u201c00\u201d soft wheat flour, San Marzano tomatoes, PDO Campanian buffalo mozzarella, and extra virgin olive oil.<\/strong><\/p>\n<p data-start=\"2156\" data-end=\"2214\">This has been the case ever since pizza was first created.<\/p>\n<p data-start=\"2216\" data-end=\"2314\">Neapolitan pizza can only be made by baking it at very high temperatures in a <strong data-start=\"2294\" data-end=\"2314\">wood-fired oven.<\/strong><\/p>\n<p data-start=\"2316\" data-end=\"2419\">This gives the pizza its characteristic <strong data-start=\"2356\" data-end=\"2378\">thick, chewy crust<\/strong>, while leaving the base thin and crispy.<\/p>\n<p data-start=\"2421\" data-end=\"2599\">Because of its status as an iconic dish of Italian cuisine, Neapolitan pizza was recognized by <strong data-start=\"2516\" data-end=\"2526\">UNESCO<\/strong> as part of the <strong data-start=\"2542\" data-end=\"2586\">Intangible Cultural Heritage of Humanity<\/strong> in <strong data-start=\"2590\" data-end=\"2598\">2017<\/strong>.<\/p>\n<p data-start=\"2601\" data-end=\"2788\">The <strong data-start=\"2605\" data-end=\"2652\">Associazione Verace Pizza Napoletana (AVPN)<\/strong> specifies the production standards and ingredient requirements that must be met to obtain the certification of \u201cTrue Neapolitan Pizza.\u201d<\/p>\n<p data-start=\"2790\" data-end=\"2946\">Neapolitan pizza has gained a following and acclaim worldwide in recent years, and there are now Neapolitan pizzerias in many cities across other countries.<\/p>\n<p data-start=\"2948\" data-end=\"3132\">The custom and skill of making Neapolitan pizza have been passed down from generation to generation, preserving the traditional recipe that developed in Naples more than a century ago.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The origins of authentic Neapolitan pizza date back to 1889, when Italy\u2019s queen, Margherita of Savoy, and her husband, King Umberto I, visited Naples.
